It’s still officially pumpkin season and with Thanksgiving not till the very end of November, it’s not going anywhere anytime soon. Here in Colorado, the temperatures are dropping drastically and I have to remind myself that it’s still fall. So today, I thought I’d share the most amazing healthy pumpkin bread recipe for you to make. I promise, you won’t even believe it’s healthy… it’s that good.

One of my best friends shared this recipe with me years ago and I’ve made it every fall since (and winter and anytime I need a little maple, pumpkin, bread in my life). It’s super easy, has very little ingredients, and is always a favorite among mall my friends. And bonus, you get to be the cutesy gal who just baked a fresh loaf of bread from scratch.

Healthy Pumpkin Bread

Ingredients:

1/3 cup coconut oil, melted
1/2 cup honey or maple syrup (I do half and half)
2 eggs
1 16oz can pumpkin pie mix
1/4 cup almond milk
2 3/4 cup whole wheat flour
1 cup oats (optional)
chocolate chips or nuts (optional)

Directions:

-Preheat oven to 350F

-Grease bread pan with coconut oil spray. Pour batter in and bake for 50-60min.

-At 30-40min, drizzle honey over the top and sprinkle with cinnamon.
